What was sold, by order date. Choose a measure and what to split it by — nothing here is a fixed view. Pipeline GP here is expectation: each order at its variants' average landed cost to date. Switch the axis to Dispatched (or see Reports → GP) for what shipped and what it actually cost, which will not agree with this.
